A delicious breakfast and a new beginning

After months and months of thinking about this blog, I have finally decided to make it happen. This morning, the weather was gorgeous and the sunlight coming in through the windows was divine and I thought that there couldn't be a more perfect morning to make my first post.

Being a morning person, breakfast is my favorite meal of the day and today's breakfast complemented my mood and the wonderful weather outside. There is nothing more wonderful and versatile as a pile of crepes, especially when you are making breakfast for lots of people. You can top them with delicious jam, fruit, syrup, Nutella or a spray of lemon with some sugar-basically everyone has their own favorite way of filling their crepes. Add in a cup of coffee and some good company and there you have a most wonderful breakfast. A great way to start your day and your new blog!

La Figue et L'Olive Vanilla Crepes

Ingredients:
*2 eggs
*1 cup of milk
*2/3 cup of all purpose flour
*pinch of salt
*1 1/2 teaspoons of vegetable oil
*1 teaspoon of vanilla

Directions:

There is nothing easier than making crepes. Combine all the ingredients together and refrigerate for an hour. Heat up a small skillet and pour a few tablespoons of batter where it is just enough to cover the bottom of the pan and swirl the pan so the batter can be dispersed evenly. Make sure there is a very thin layer of batter on the pan. After a minute or two, once the top of the crepe is dry and the bottom is golden, flip the crepe and cook it for another minute or so on the other side. Enjoy!
